Rub pork loin with 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 1/2 teaspoons thyme, then sprinkle with salt and pepper; place pork loin in a shallow roasting pan. (I used an iron skillet) and roast for 15 minutes. Meanwhile mix marinade ingredients and slather on pork chops. Toss potatoes with remaining herb mixture; arrange around roast. Cook 10-15 minutes depending on size. Place in a roasting pan coated with cooking spray. Reduce heat to 325 degrees, and roast meat for about 45 minutes. Cover and bake at 350° for 1 to 1-1/4 hours or until a thermometer reads 160°. Put the potaoes in also. Approximately 45 minutes before the pork is ready, toss the cooked potatoes in the melted duck fat and place on the wire rack around the pork. Poke holes in the roast with a sharp knife and insert garlic slivers. In a Dutch oven over medium-high heat, brown roast in remaining oil on all sides. Roast in the preheated oven for 50 to 55 minutes. Cut the meat into bites and braise them in heated oil, while periodically pouring in a bit of hot water, until softened.. Add the finely chopped onions, sliced into strips carrots and diced potatoes in succession - be sure to braise 3-4 min. Set oven to 400*. Bake in a 300 degree oven for 2 1/2 hours; covered. After an hour use a baster to get some juice from the bottom of the pan. toss potatoes with 1T oil, salt and pepper. Toss the potatoes and carrots with the olive oil, sprinkle with salt, and place in the pan around the pork. Put the pork steaks in a single layer on top of the onions and the celery. Salt and pepper the potatoes. Cut the garlic into slivers. Cook with the pork for 20 minutes, then change the oven setting to 200°C CircoRoast with low added steam and cook for the remaining 20-25 minutes (increasing the temperature will help the potatoes and crackling on the pork to crisp up). Let stand for 10 minutes before slicing. Put the carrots along the edges of the pan. When potatoes have cooked 15 minutes add pork chops to the pan. Place in roasting pan big enough to hold potatoes and chops. Put the pork on a rack in a roasting pan and place in the oven. after each ingredient you add in.
